Pomegranate peel powder is produced from the outer rind of the fruit β€” the thick, leathery skin that is discarded in fresh consumption. It has a strongly astringent, bitter flavour with no sweetness, a tan to brown colour, and contains significantly higher concentrations of polyphenols β€” particularly punicalagins β€” than aril powder. Punicalagins are the largest molecular weight polyphenols known in any plant, and pomegranate peel is their primary commercial source.
