Ripe banana powder is produced from fully ripe bananas. As the fruit ripens, the resistant starch converts almost entirely into simple sugars (glucose, fructose, sucrose). Ripe banana powder is sweet, strongly flavoured, and rich in natural sugars (40β60% of dry weight). Its colour is pale yellow to golden and it has the characteristic banana aroma and taste.
